Star chef serves the Finnmark Race

The winner of the bronze medal in Bocuse d' Or from 2011, Gunnar Hvarnes, is visiting the Finnmark Race these days.  The chef presents a rare taste experience in Alta town square Friday and Saturday.

Gunnar Hvarnes has composed the salmon dish, which will be offered for free in Alta and around Finnmark. The salmon, which is served with fennel, ginger-glaze, cauliflower and horseradish mayonnaise, will be prepared on campfire pans in Alta town square.

Follows the race

Friday and Saturday, Hvarnes will be in the «Laks er viktig» siida. He brings along two assistant chefs from the cultural centre Sisa.

– I look forward to working with fantastic quality salmon and hopefully presenting some new flavors to the audience, says the star chef.

The two assistant chefs from the cultural centre Sisa will staff the siida as it travels around Finnmark after the opening days in Alta. 

The participants get a taste

Gunnar Hvarnes has been hired by the elite sponsor «Laks er viktig for Norge». According to executive manager in the Finnmark Race, Jannicke Mannsverk, he enhances the quality of the event.

– The Finnmark Race wants quality at all levels. Setting the standard with one of Norway’s best chefs in the siida, underscores the race’s professionalism. It is in line with what we and our collaborators strive for every year. That we can serve our audience salmon dishes, prepared by Gunnar Hvarnes, is great. The siida will be a gathering place you do not want to miss and of course we suggest people should stop by, says Mannsverk.

In addition to working in the siida, Hvarnes will be serving food during the kick off on Thursday, and he will serve all the participants lunch during the seminar luncheon on Friday.
